Cindy’s Quick and Easy REAL Mac-n-Cheese (ready in less than 15 minutes)

1 13.25-oz pkg whole wheat elbow macaroni
Salt to taste
At least 2 cups freshly grated extra-sharp cheddar cheese
½ to ¾ cup heavy whipping cream
16 oz cubed, browned ham (optional)
2 cups additional grated cheese

Cook the macaroni noodles according to package directions. While the noodles are cooking, brown the ham (optional) and set aside, then combine the grated cheese with ½ cup of cream in a saucepan, heating very gently until the cheese is melted. The cheese sauce should be slightly thicker in consistency than the cream. Add additional cheese and cream until you have about 2 cups total. Drain the noodles, but do not rinse. Return the noodles to the drained cooking pot and add ham and cheese sauce, mixing thoroughly. If it appears that more cheese sauce is needed, simply add a little more cream to the saucepan and grate in a little more cheese; once melted, add to the macaroni mixture. Pour mac-n-cheese into an oven-safe dish and cover with remaining grated cheese. Place under the broiler until the cheese on top is bubbly. Serve, and enjoy!
